Make super healthy tomato soup yourself
What do you need to make super healthy tomato soup yourself?
800 grams of tomatoes
1 liter of vegetable broth
1 red onion
2 leaves of fresh laurel
pepper from the mill
sea salt
a little lemon juice
a dash of olive oil
fresh thyme
fresh parsley
a few basil leaves
First you have to peel the tomatoes. You do this by immersing them one by one in hot water until they become wrinkled.
Use a pair of pliers or skimmer because it is hot. Take them out and immerse them in cold water. Now you can easily remove the sheet. Cut the tomatoes in four.
Cut the red onion into chips. Remove the thyme from the stalk and finely chop it.
Take a large pan, put it over a medium heat and add a dash of olive oil. Fry the red here until it looks very light brown.
Add the peeled tomatoes and add the two bay leaves. You can now also put in the fresh thyme and some pepper and sea salt.
Add a dash of vegetable stock to prevent the tomatoes from burning and let it boil for about twenty minutes on a low heat.
Optionally, you can continue to add some broth if it looks like the soup is boiling dry.
After twenty minutes you can add all the vegetable broth and a little bit of lemon juice that you have left and warm the soup for a while.
Remove the bay leaves from the soup with a skimmer or something. Now cut the parsley a little finer and add it at the end.
If you put the soup in a bowl or serve on a plate, place a top of the basil in the middle.
This is of course extra festive and basil and tomatoes fit together so well.
